Chicken Tender Bowl

As a child I remember going to Islands (small chain restaurant in west LA) with my family and ordering the chicken tenders. Before today, I don’t even remember the last time I ate them! When I think of chicken tenders I think of fried white bread crumbs and canola oil… until now! I used Barneys brand new almond meal as the crust for these chicken tenders. There is just one ingredient: almonds! The rest of the ingredients for the chicken tenders are so minimal and there’s no frying involved! Just spices and one pasture raised egg. I ate them with a big salad full of avocado, hummus, roasted veggies and edible flowers🌺. These are paleo, grain free, oil free, and dairy free! I’m so excited for this blog and to inspire you to eat healthy as well.

INGREDIENTS

1/2 teaspoon of garlic powder, black pepper, and cayenne pepper,

1 cup almond meal (flour)

1 teaspoon of paprika

1/4 teaspoon of pink Himalayan salt

1 pasture raised egg

1 container of organic chicken tenders (mine were from Trader Joe’s)

INSTRUCTIONS

The recipe is on the back of the Barney’s almond meal package! I changed up a few things such as the measurements and time. Just preheat the oven to 375 degrees, then mix all of the spices with the almond meal. In a separate bowl, scramble one egg. Then, take one chicken tender and cover it in the scrambled egg mixture, then smother it in the almond mixture. Repeat until every chicken tender is covered and pop into the oven for 26 minutes, flipping half way. Enjoy!
