Coconut Butter

Processed with VSCO with c2 presetI see people on instagram using coconut butter all the time but I always thought it was so hard to make. Funny enough, it’s actually one of the easiest things I’ve ever made! I’m so excited to share this recipe with you because I’ve been eating it all day every day. Anyone with lupus (or any autoimmune disease) should be consuming health fats to coat their joints and provide anti-inflammatory health benefits. Enjoy!

INGREDIENTS

  • 1 tablespoon of coconut oil
  • 2.5 cups of desiccated coconut chips (or shredded coconut, just make sure the only ingredient is dried coconut!)

INSTRUCTIONS

  1. blend shredded coconut until you reach a thick creamy consistency that resembles cauliflower rice (don’t forget to scrape down the sides)!
  2. add coconut oil
