Delicious, Chewy Chocolate Chip Cookies

It’s the holiday season! Happy December, y’all! My friend made delicious Nestle chocolate chip cookies yesterday, so I was determined to come up with a healthy alternative to the refined sugar-filled cookies. Though I believe in a balanced lifestyle (definitely ate her cookies), the holiday’s are filled with an excessive amout of refined sugar and gluten that can disrupt our bodies natural digestion. These cookied are a great alternative, they are gluten free, refined suagr free, AND though they contain pasture-raised butter, I made a dairy free version which you can find the recipe for RIGHT HERE. I prefer the butter ones, but the dairy free ones are still awesome! Are ya ready?





  • 1/2 c oats blended into a flour-like texture
  • 3/4 c almond meal
  • 1/4 tsp each: baking soda and powder
  • 1/3 c softened but not melted pasture-raised butter
  • 1/2 c coconut sugar
  • 1 tsp vanilla extract
  • 1 pasture-raised egg
  • 1/2 and 1/4 cup dark chocolate chips
  • 2 tbs gluten free flour


  1. In a bowl, mix dry ingredients together EXCEPT the gluten free flour
  2. then, soften the butter (pictured below)
  3. mix the butter and coconut sugar to create a doughy consistency
  4. then add the rest of the wet ingredients
  5. combine wet to dry, stir, then add the gluten free flour
  6. mix in dark chocolate chips
  7. cover and chill in the refrigerator for one hour (ugh! hardest part)
  8. at the last 15 minutes, pre-heat oven to 350 F
  9. form balls out of the dough and bake until the outer circle browns, about 13 minutes
