Dairy Free Chocolate Chip Cookies

This is essenitally the same recipe as my “Easy Chewy Chocolate Chip Cookies’ however, I swapped the butter for coconut oil to make a dairy free version of a very tasty treat! By the way, I used refined organic coconut oil, as it does not contain flavor! If you like the taste of coconut, these cookies can be made with regular virgin coconut oil and have a coco-nutty taste!

INGREDIENTS

  • 1/2 c oats blended into a flour-like texture
  • 3/4 c almond meal
  • 1/4 tsp each: baking soda and powder
  • 1/3 c softened but not melted coconut oil
  • 1/2 c coconut sugar
  • 1 tsp vanilla extract
  • 1 pasture-raised egg
  • 1/2 and 1/4 cup dark chocolate chips
  • 2 tbs gluten free flour

INSTRUCTIONS

  1. In a bowl, mix dry ingredients together EXCEPT the gluten free flour
  2. then, soften the coconut oil (pictured below)
  3. mix the coconut oil and coconut sugar to create a doughy consistency
  4. then add the rest of the wet ingredients
  5. combine wet to dry, stir, then add the gluten free flour
  6. mix in dark chocolate chips
  7. cover and chill in the refrigerator for one hour (ugh! hardest part)
  8. at the last 15 minutes, pre-heat oven to 350 F
  9. form balls out of the dough and bake until the outer circle browns, mine were ready in about 14 minutes
